Beef Tacos with Avocado Salsa and Crispy Tortilla Strips Recipe

Servings: 4-6

Ingredients:

For the Beef:

  • 1 pound ground beef
  • 1/2 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 packet of taco seasoning
  • 1/2 cup water
  • Salt and pepper to taste
  • 8-10 corn tortillas

For the Avocado Salsa:

  • 3 ripe avocados, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/2 red onion, finely chopped
  • 1 lime, juiced
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Cilantro leaves for garnish

For the Crispy Tortilla Strips:

  • 8-10 corn tortillas
  • Vegetable oil for frying
  • Salt to taste

Instructions:

  1. Prepare the Beef:
    In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon, until it’s fully browned, about 5-7 minutes.
    Add the diced onion, garlic, and taco seasoning to the skillet. Cook until the onion is translucent, about 2-3 minutes.
    Add the water to the skillet and stir to combine. Bring the mixture to a simmer and cook for 5-7 minutes or until the liquid has reduced and the beef is fully cooked. Season with salt and pepper to taste.
  2. Prepare the Avocado Salsa:
    In a medium bowl, combine the diced avocado, jalapeño pepper, red onion, lime juice, and garlic. Stir gently to combine. Season with salt and pepper to taste.
  3. Prepare the Crispy Tortilla Strips:
    Cut the corn tortillas into thin strips. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Fry the tortilla strips in batches until they are golden brown and crispy, about 2-3 minutes per batch. Drain the strips on paper towels and sprinkle with salt to taste.
  4. Assemble the Tacos:
    Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Assemble the tacos by spooning the beef onto a tortilla, followed by a spoonful of the Avocado Salsa, and topping with a few crispy tortilla strips. Garnish with cilantro leaves and serve immediately.

Tips and Variations:

  • Use leftover taco meat or cooked ground turkey or chicken as a substitute.
  • Add diced bell peppers, diced tomatoes, or shredded lettuce to the beef for added flavor and texture.
  • Replace the Avocado Salsa with a more traditional salsa or pico de gallo.
  • Experiment with different seasonings for the beef, such as fajita seasoning or cumin.
  • Serve the tacos with shredded cheese, diced avocado, or sour cream for extra flavor and creaminess.
