Sunday Supper: Classic Beef Shepherd’s Pie with Ground Beef, Peas, and Carrots
A hearty, comforting dish that’s perfect for a Sunday afternoon. This classic Beef Shepherd’s Pie is a staple of British cuisine, made with tender ground beef, sweet peas and carrots, and topped with a crispy mashed potato crust.

Ingredients:
For the Ground Beef Filling:
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 1 cup beef broth
- 2 tbsp all-purpose flour
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Mashed Potato Topping:
- 3-4 large potatoes, peeled and chopped into 1-inch cubes
- 1/4 cup butter
- 1/2 cup whole milk
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350°F (180°C).
- In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.
- Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
- Stir in the frozen peas and carrots, beef broth, flour, thyme, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for 10-15 minutes.
- While the filling is cooking, prepare the mashed potato topping. Boil the chopped potatoes in a large pot of salted water until they are tender. Drain the potatoes and return them to the pot. Add the butter, milk, salt, and pepper, and mash the potatoes with a potato masher or a fork until they’re smooth and creamy.
- Transfer the ground beef filling to a 9×13 inch baking dish.
- Spread the mashed potato topping evenly over the filling, making sure to cover the entire surface.
- Bake the Shepherd’s Pie in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and the filling is hot and bubbly.
- Serve hot, garnished with chopped fresh parsley or chives if desired.
