Servings: 4-6
Prep Time: 20 minutes
Cook Time: 15-20 minutes
Total Time: 35-40 minutes
Ingredients:
- 1 pound beef fajita-cut strips (sirloin or ribeye)
- 1/2 cup lime juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 large onions, sliced
- 2 large bell peppers (any color), sliced
- 8 small flour tortillas
- Optional toppings: avocado, sour cream, salsa, shredded cheese, cilantro
Instructions:
- Marinate the beef: In a large bowl, whisk together lime juice, olive oil, garlic, cumin, paprika, salt, and pepper. Add the beef strips and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
- Heat the grill or grill pan: Preheat a grill or grill pan to medium-high heat.
- Cook the beef: Remove the beef from the marinade, letting any excess liquid drip off. Grill the beef for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer the beef to a plate and cover with foil to keep warm.
- Sauté the onions and bell peppers: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sliced onions and cook for 5 minutes, or until they start to soften. Add the sliced bell peppers and cook for an additional 5-7 minutes, or until they’re tender and lightly charred. Season with salt and pepper to taste.
- Warm the tortillas: Wrap the tortillas in a damp paper towel and microwave for 20-30 seconds, or until they’re warm and pliable.
- Assemble the fajitas: Slice the cooked beef against the grain into thin strips. Divide the beef, sautéed onions and bell peppers, and warm tortillas among plates. Add your desired toppings, such as avocado, sour cream, salsa, shredded cheese, and cilantro.
