Ingredients:
For the beef:
- 1.5 lbs beef fajita-cut strips (such as flank steak or skirt steak)
- 1 tsp lime juice
- 1 tsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt and pepper to taste
For the sautéed onions and bell peppers:
- 2 large onions, sliced
- 2 large bell peppers, sliced (any color)
- 2 cloves garlic, minced
- 1 jalapeño pepper, sliced
- Salt and pepper to taste
For the tortillas and toppings:
- 4-6 flour tortillas
- Optional toppings: cilantro, avocado, sour cream, sliced radishes, lime wedges, shredded cheese
Instructions:
- Prepare the beef: In a large bowl, whisk together lime juice, olive oil, cumin, chili powder, paprika, salt, and pepper. Add the beef and marinate for at least 10-15 minutes, or up to 2 hours in the refrigerator.
- Prepare the vegetables: Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers, and cook for 5-7 minutes or until they start to soften. Add the garlic and jalapeño, and cook for an additional 1-2 minutes. Remove the vegetables from the skillet and set aside.
- Pan-sear the beef: Remove the beef from the marinade, allowing any excess to drip off. Place the beef in the same skillet used for the vegetables, and cook for 3-5 minutes per side or until cooked to desired doneness. Transfer the beef to a cutting board and let rest for 2-3 minutes before slicing into thin strips.
- Assemble the fajitas: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Slice the beef and vegetables, and place them onto a plate or skillet. Serve with sliced avocado, sour cream, cilantro, lime wedges, and any other desired toppings.
