Slow Cooker Beef Tacos:

Ingredients:

  • 2 pounds beef (ground or shredded), browned with 1 onion, 1 packet of taco seasoning, and 1 tablespoon chili powder
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 8-10 corn tortillas
  • Shredded cheese, for serving

Crispy Tortilla Strips:

  • 8-10 corn tortillas
  • Vegetable oil, for frying
  • Salt, to taste

  1. Prepare the slow cooker: In a large slow cooker, combine the browned beef, diced tomatoes, beef broth, tomato paste, cumin, salt, and pepper. Stir to combine, then cover and cook on low for 8-10 hours or high for 4-6 hours.
  2. Prepare the tortilla strips: Cut the corn tortillas into thin strips, about 1 inch wide. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Fry the tortilla strips in batches, until crispy and golden brown, about 30 seconds per side. Drain on paper towels. Sprinkle with salt to taste.
  3. Assemble the tacos: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Assemble the tacos by spooning the slow cooker beef mixture onto a warmed tortilla, followed by your desired toppings.
