- 1 (1.5-2 pound) beef tenderloin

Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, garlic, thyme, salt, and pepper.
- Rub the mixture all over the beef tenderloin, making sure to coat it evenly.
- Place the beef tenderloin on a rimmed baking sheet or a roasting pan, and roast for 20-25 minutes per pound, or until it reaches your desired level of doneness. Use a meat thermometer to check for internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (65°C) for medium-well.
- While the beef is roasting, prepare the horseradish cream sauce. In a small bowl, whisk together the heavy cream, horseradish, Dijon mustard, and chives until smooth. Season with salt and pepper to taste.
- Once the beef is cooked to your liking, remove it from the oven and let it rest for 10-15 minutes before slicing it thinly against the grain.
- Serve the sliced beef with the horseradish cream sauce spooned over the top.
