Ingredients:

- 1.5 pounds beef tenderloin or strip loin, sliced into 1-inch medallions
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon thyme leaves

For the Roasted Garlic Mashed Potatoes:
- 3-4 large potatoes, peeled and chopped into 1-inch cubes
- 2 heads of garlic, separated into individual cloves
- 2 tablespoons unsalted butter
- 1 cup heavy cream or whole milk
- Salt and pepper, to taste
Instructions:
- Roasted Garlic Mashed Potatoes:
- Preheat oven to 400°F (200°C).
- Place the garlic cloves on a piece of aluminum foil, drizzle with olive oil, and season with salt and pepper. Fold the foil to create a packet and roast for 30-35 minutes, or until the garlic is tender and mashed.
- Remove the potatoes from the oven and add the roasted garlic, butter, salt, and pepper. Mash the potatoes until smooth and creamy, adding more cream or milk if needed.
- Pan-Seared Beef Medallions:
- Preheat a skillet over medium-high heat.
- Season the beef medallions with salt, pepper, and thyme. Add the olive oil to the skillet and sear the beef for 2-3 minutes on each side, or until it reaches your desired level of doneness.
- Remove the beef from the skillet and set it aside to rest.
- If using red wine, add it to the skillet and simmer for 1-2 minutes to reduce the sauce. Serve the beef medallions with the reduced sauce spooned over the top.
Assembly and Serving:
- Place a beef medallion on each plate.
- Spoon the roasted garlic mashed potatoes alongside the beef.
- Drizzle the reduced red wine sauce (if using) over the top of the beef and potatoes.
