Ingredients:

For the Pan-Seared Beef Medallions:

  • 1.5 pounds beef tenderloin or strip loin, sliced into 1-inch medallions
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon thyme leaves
  • Salt and pepper, to taste
  • 1 cup red wine (optional)

For the Roasted Garlic Mashed Potatoes:

  • 3-4 large potatoes, peeled and chopped into 1-inch cubes
  • 2 heads of garlic, separated into individual cloves
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream or whole milk
  • Salt and pepper, to taste

Instructions:

  1. Roasted Garlic Mashed Potatoes:

    • Preheat oven to 400°F (200°C).
    • Place the garlic cloves on a piece of aluminum foil, drizzle with olive oil, and season with salt and pepper. Fold the foil to create a packet and roast for 30-35 minutes, or until the garlic is tender and mashed.
    • Remove the potatoes from the oven and add the roasted garlic, butter, salt, and pepper. Mash the potatoes until smooth and creamy, adding more cream or milk if needed.
  2. Pan-Seared Beef Medallions:

    • Preheat a skillet over medium-high heat.
    • Season the beef medallions with salt, pepper, and thyme. Add the olive oil to the skillet and sear the beef for 2-3 minutes on each side, or until it reaches your desired level of doneness.
    • Remove the beef from the skillet and set it aside to rest.
    • If using red wine, add it to the skillet and simmer for 1-2 minutes to reduce the sauce. Serve the beef medallions with the reduced sauce spooned over the top.

Assembly and Serving:

  1. Place a beef medallion on each plate.
  2. Spoon the roasted garlic mashed potatoes alongside the beef.
  3. Drizzle the reduced red wine sauce (if using) over the top of the beef and potatoes.
