Korean-Style BBQ Beef Tacos with Kimchi Slaw Recipe

Servings: 4-6 people

Korean-Style BBQ Beef:

Ingredients:

  • 1 pound beef (such as flank steak or ribeye), sliced into thin strips
  • 2 tablespoons Gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1/4 cup water
  • 1/4 cup chopped green onions, for garnish
  • 1/4 cup toasted sesame seeds, for garnish

Instructions:

  1. In a large bowl, whisk together Gochujang, soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, and water.
  2. Add the sliced beef to the marinade and toss to coat. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat a grill or grill pan to medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off.
  4. Grill the beef for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer to a cutting board and slice into thin strips.

Kimchi Slaw:

Ingredients:

  • 2 cups kimchi, chopped (store-bought or homemade)
  • 1 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/4 cup chopped cilantro, for garnish

Instructions:

  1. In a medium bowl, combine the chopped kimchi, red cabbage, and carrots.
  2. In a small bowl, whisk together lime juice and honey. Pour the dressing over the kimchi mixture and toss to coat.
  3. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Assembly and Serving:

  1. Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  2. Assemble the tacos by slicing the grilled beef into thin strips and placing them onto a warmed tortilla.
  3. Top the beef with a spoonful of kimchi slaw, followed by a sprinkle of chopped green onions and toasted sesame seeds.
  4. Serve immediately and enjoy!
