Servings: 4-6 people
Korean-Style BBQ Beef:
Ingredients:
- 1 pound beef (such as flank steak or ribeye), sliced into thin strips
- 2 tablespoons Gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1/4 cup water
- 1/4 cup chopped green onions, for garnish
- 1/4 cup toasted sesame seeds, for garnish
Instructions:
- In a large bowl, whisk together Gochujang, soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, and water.
- Add the sliced beef to the marinade and toss to coat. Cover and refrigerate for at least 2 hours or overnight.
- Preheat a grill or grill pan to medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off.
- Grill the beef for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer to a cutting board and slice into thin strips.

- 2 cups kimchi, chopped (store-bought or homemade)
- 1 cup shredded red cabbage
- 1/2 cup shredded carrots
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1/4 cup chopped cilantro, for garnish
Instructions:
- In a medium bowl, combine the chopped kimchi, red cabbage, and carrots.
- In a small bowl, whisk together lime juice and honey. Pour the dressing over the kimchi mixture and toss to coat.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Assembly and Serving:
- Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the tacos by slicing the grilled beef into thin strips and placing them onto a warmed tortilla.
- Top the beef with a spoonful of kimchi slaw, followed by a sprinkle of chopped green onions and toasted sesame seeds.
- Serve immediately and enjoy!
