Ingredients:

  • 1 tbsp refined canola oil
  • 2 cloves garlic, minced
  • 2 tsp fresh ginger, minced
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 medium sized onion, sliced into strips
  • 1 medium sized carrot, thinly sliced
  • 1 medium sized zucchini, thinly sliced
  • 1 cup broccolini or broccoli florets
  • 1/2 cup shiitake mushrooms, sliced
  • 1/2 cup snow peas
  • 1/4 cup honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1/2 cup water
  • Salt and black pepper to taste
  • Cooked jasmine rice or rice noodles, for serving

Instructions:

  1. In a small bowl, whisk together the honey, low-sodium soy sauce, rice vinegar, and cornstarch until fully combined. Then whisk in the water and set aside.

  2. Heat a large wok or skillet over high heat. Add the refined canola oil and swirl to coat the pan.

  3. Add the minced garlic and ginger to the pan and sauté for about 30 seconds or until fragrant.

  4. Add the sliced red and yellow bell peppers, onion, carrot, and zucchini to the pan, and stir-fry for about 3-4 minutes or until the vegetables are crisp-tender.

  5. Add the broccolini, shiitake mushrooms, and snow peas to the pan and stir-fry for another 2-3 minutes or until the vegetables are cooked through.

  6. Pour the honey-soy sauce mixture into the pan and stir to coat the vegetables evenly.

  7. Cook and stir the stir-fry for another 1-2 minutes or until the sauce has thickened and the vegetables are glazed.

  8. Season to taste with salt and black pepper.

  9. Serve the gourmet stir-fry hot over cooked jasmine rice or rice noodles.
