Instructions:

In a small bowl, whisk together the honey, low-sodium soy sauce, rice vinegar, and cornstarch until fully combined. Then whisk in the water and set aside.

Heat a large wok or skillet over high heat. Add the refined canola oil and swirl to coat the pan.

Add the minced garlic and ginger to the pan and sauté for about 30 seconds or until fragrant.

Add the sliced red and yellow bell peppers, onion, carrot, and zucchini to the pan, and stir-fry for about 3-4 minutes or until the vegetables are crisp-tender.

Add the broccolini, shiitake mushrooms, and snow peas to the pan and stir-fry for another 2-3 minutes or until the vegetables are cooked through.
