Title: Cruciferous Delight – Chard and Broccoli Sauté with Garlic and Lemon

Ingredients:

  1. 1 large bunch of Swiss chard or rainbow chard, washed, tough stalks removed and leaves finely chopped
  2. 1 head of Broccoli, cut into small florets
  3. 4 cloves of Garlic, minced
  4. 6 tablespoons of extra virgin olive oil, divided
  5. 2 tablespoons of fresh lemon juice
  6. 2 tablespoons of lemon zest
  7. Salt and freshly ground black pepper, to taste
  8. 1 teaspoon red pepper flakes (optional)
  9. Chopped toasted pine nuts for garnish
  10. Grated Parmesan cheese (optional)

Instructions:

  1. Drizzle a bit of olive oil over the Swiss chard and broccoli stalks and toss to coat. Set aside.

  2. Heat 4 tablespoons of olive oil in a large skillet over medium-high heat. Add the minced garlic and cook for a minute or until fragrant, but be careful not to burn it.

  3. Add the chard stalks and sauté for 3-4 minutes, until they start to soften.

  4. Add the broccoli florets and continue to sauté for an additional 3-4 minutes, or until they begin to soften.

  5. Add the chard leaves and stir until wilted and the broccoli is cooked to desired tenderness.

  6. Season with salt and black pepper, as well as red pepper flakes if you like some spice.

  7. Stir in the lemon juice and zest, and toss to combine.

  8. Remove from the heat and transfer to a serving dish.

  9. Drizzle the sauté with the remaining 2 tablespoons of olive oil.

  10. Garnish with toasted pine nuts and optional grated Parmesan.

  11. Serve hot with your favorite main dish or eat as a side.
