Title: Delightful Yogurt-Marinated Greek Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups Greek yogurt (plain, full fat)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- Juice of 1 lemon
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tablespoons olive oil (for roasting vegetables)
- Fresh parsley, chopped (for garnish)

Start by preparing the marinade. In a medium-sized bowl, mix together the Greek yogurt, olive oil, minced garlic, lemon juice, dried oregano, dried basil, dried thyme, dried rosemary, salt, and black pepper. Stir until everything is well combined.

Place the chicken breasts in a large Ziploc bag, and pour the marinade over them. Seal the bag, massaging the chicken to ensure it’s completely covered.

Refrigerate the chicken and allow it to marinate for at least 2 hours, or up to 8 hours. The longer it marinates, the more flavorful the chicken will be.

After marinating, preheat the oven to 375°F (190°C). Arrange the sliced bell peppers in a single layer in a roasting pan. Drizzle with olive oil and a sprinkle of salt and pepper.

Place the chicken breasts, as well as the marinade in the roasting pan, on top of the bell peppers. Cover the pan with foil and roast for 35-40 minutes, until the chicken is cooked through and no longer pink in the middle.

Once the chicken is cooked, remove the pan from the oven. Let the chicken rest for 5 minutes before slicing.
- Serve the Delightful Yogurt-Marinated Greek Chicken warm, accompanied by the roasted bell peppers. Garnish with chopped fresh parsley.
