Sunday Supper: Classic Beef Shepherd’s Pie with Ground Beef, Peas, and Carrots

A hearty, comforting dish that’s perfect for a Sunday afternoon. This classic Beef Shepherd’s Pie is a staple of British cuisine, made with tender ground beef, sweet peas and carrots, and topped with a crispy mashed potato crust.

Ingredients:

For the Ground Beef Filling:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Mashed Potato Topping:

  • 3-4 large potatoes, peeled and chopped into 1-inch cubes
  • 1/4 cup butter
  • 1/2 cup whole milk
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.
  3. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
  4. Stir in the frozen peas and carrots, beef broth, flour, thyme, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for 10-15 minutes.
  5. While the filling is cooking, prepare the mashed potato topping. Boil the chopped potatoes in a large pot of salted water until they are tender. Drain the potatoes and return them to the pot. Add the butter, milk, salt, and pepper, and mash the potatoes with a potato masher or a fork until they’re smooth and creamy.
  6. Transfer the ground beef filling to a 9×13 inch baking dish.
  7. Spread the mashed potato topping evenly over the filling, making sure to cover the entire surface.
  8. Bake the Shepherd’s Pie in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and the filling is hot and bubbly.
  9. Serve hot, garnished with chopped fresh parsley or chives if desired.
