Spicy Beef Fajitas: Sizzling Beef Strips with Sauteed Onions and Bell Peppers
Servings: 4-6
Cooking Time: 20-25 minutes
Ingredients:
- 1 pound beef strips (such as flank steak or skirt steak), sliced into thin strips
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
- 1 large onion, sliced
- 2 large bell peppers (any color), sliced
- 8 small flour tortillas
- Salt and pepper, to taste
- Optional toppings: avocado, sour cream, shredded cheese, cilantro, salsa
Instructions:
- In a large resealable plastic bag, combine lime juice, garlic, cumin, chili powder, and cayenne pepper (if using). Add the beef strips and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Heat a large cast-iron skillet or griddle over medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off.
- Add the beef to the skillet and cook for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer the beef to a plate and cover with foil to keep warm.
- In the same skillet, add the sliced onions and bell peppers. Cook, stirring occasionally, for 5-7 minutes, or until the vegetables are tender and lightly charred.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the fajitas by slicing the beef into thin strips and adding it to the tortillas along with the sautéed onions and bell peppers. Season with salt and pepper to taste.
- Serve immediately, with optional toppings of your choice.

Tips and Variations:
- For extra flavor, add 1-2 tablespoons of olive oil to the skillet before cooking the beef and vegetables.
- If using cayenne pepper, adjust the amount to your desired level of heat.
- Add some crunch by topping with chopped fresh cilantro, diced tomatoes, or crispy tortilla strips.
- For a vegetarian option, substitute the beef with sliced portobello mushrooms or extra-firm tofu.
- Experiment with different types of peppers, such as jalapeños or Anaheim peppers, for added heat or flavor.
