Ingredients:

For the stew:

  • 2 pounds beef stew meat (such as chuck or round), cut into 1 1/2-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 red potato, peeled and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 bay leaves

For the crusty bread (optional):

  • 1 baguette, sliced and toasted

Instructions:
