Beef Tacos with Avocado Salsa and Crispy Tortilla Strips Recipe

Ingredients:
For the Beef:
- 1 pound ground beef
- 1/2 medium onion, diced
- 2 cloves of garlic, minced
- 1 packet of taco seasoning
- 1/2 cup water
- Salt and pepper to taste
- 8-10 corn tortillas
For the Avocado Salsa:
- 3 ripe avocados, diced
- 1 jalapeño pepper, seeded and finely chopped
- 1/2 red onion, finely chopped
- 1 lime, juiced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Cilantro leaves for garnish
For the Crispy Tortilla Strips:
- 8-10 corn tortillas
- Vegetable oil for frying
- Salt to taste
Instructions:
- Prepare the Beef:
In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon, until it’s fully browned, about 5-7 minutes.
Add the diced onion, garlic, and taco seasoning to the skillet. Cook until the onion is translucent, about 2-3 minutes.
Add the water to the skillet and stir to combine. Bring the mixture to a simmer and cook for 5-7 minutes or until the liquid has reduced and the beef is fully cooked. Season with salt and pepper to taste. - Prepare the Avocado Salsa:
In a medium bowl, combine the diced avocado, jalapeño pepper, red onion, lime juice, and garlic. Stir gently to combine. Season with salt and pepper to taste. - Prepare the Crispy Tortilla Strips:
Cut the corn tortillas into thin strips. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Fry the tortilla strips in batches until they are golden brown and crispy, about 2-3 minutes per batch. Drain the strips on paper towels and sprinkle with salt to taste. - Assemble the Tacos:
Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Assemble the tacos by spooning the beef onto a tortilla, followed by a spoonful of the Avocado Salsa, and topping with a few crispy tortilla strips. Garnish with cilantro leaves and serve immediately.

- Use leftover taco meat or cooked ground turkey or chicken as a substitute.
