Here’s a recipe for a delicious and easy-to-make dish that combines the flavors of chicken, vegetables, and pasta. I’ll also include a picture of the dish that I like the most.
Recipe: Chicken Fettuccine Alfredo with Roasted Vegetables
Servings: 4-6
Ingredients:
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup fettuccine pasta
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (such as broccoli, carrots, and bell peppers)
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Cook the fettuccine pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-6 minutes. Remove from heat and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent, about 3-4 minutes.
- Add the mixed vegetables to the skillet and cook until they are tender, about 5-6 minutes.
- In a large saucepan, combine the heavy cream and Parmesan cheese. Heat over medium heat, stirring constantly, until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
- Add the cooked fettuccine pasta to the saucepan and toss with the cream sauce until the pasta is well coated.
- Add the cooked chicken and roasted vegetables to the pasta and toss until everything is well combined.
- Serve hot, garnished with chopped fresh parsley if desired.
Which one do you like the most?
I like the roasted vegetables the most! There’s something about the way the vegetables are caramelized and tender that makes them so delicious. Plus, they add a nice pop of color to the dish.
