Spicy Beef Fajitas with Sauteed Onions and Bell Peppers Recipe

Ingredients:

  • 1 pound beef fajita-cut strips (such as flank steak or skirt steak)
  • 1/2 cup lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (or more to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large onion, sliced
  • 2 large bell peppers (any color), sliced
  • 8 small flour tortillas
  • Optional toppings: avocado, sour cream, shredded cheese, cilantro, salsa

Instructions:

  1. In a large resealable plastic bag, combine lime juice, garlic, cumin, chili powder, cayenne pepper, salt, and black pepper. Add the beef strips and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  2. Heat a large cast-iron skillet or griddle over medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off. Add the beef to the skillet and cook for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer the beef to a plate and cover with foil to keep warm.
  3. In the same skillet, add the sliced onions and bell peppers. Cook, stirring occasionally, for 5-7 minutes or until the vegetables are tender and lightly charred.
  4. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  5. Assemble the fajitas by slicing the beef into thin strips and adding it to the tortillas along with the sautéed onions and bell peppers. Serve with your choice of toppings.
