Spicy and Satisfying: Korean-Style BBQ Beef Tacos Recipe

Ingredients:
For the Beef:
- 1 lb beef short ribs or flank steak, sliced into thin strips
- 2 tbsp Gochujang (Korean chili paste)
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 2 tbsp garlic, minced
- 1 tsp grated ginger
- 1/4 cup water
- 1/4 cup green onions, thinly sliced
- 1/4 cup toasted sesame seeds
- Salt and pepper, to taste
For the Tacos:
- 6-8 corn tortillas
- Kimchi slaw (recipe below)
- Pickled radish, thinly sliced
- Green onions, thinly sliced
- Sesame seeds, toasted
- Sriracha sauce, for serving (optional)
Kimchi Slaw:
- 2 cups kimchi, chopped
- 1/2 cup mayonnaise
- 2 tbsp lime juice
- 1 tsp honey
- Salt and pepper, to taste
- Chopped cilantro, for garnish
Instructions:
- In a large bowl, whisk together Gochujang, soy sauce, brown sugar, garlic, and ginger. Add the sliced beef and let marinate for at least 2 hours or overnight.
- Preheat a grill or grill pan to medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off. Grill the beef for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer to a cutting board and let rest for 5 minutes before slicing into thin strips.
- Meanwhile, toast the sesame seeds in a small skillet over medium heat, stirring frequently, until fragrant and lightly browned.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the tacos by slicing the beef into thin strips and placing it onto a warmed tortilla. Top with kimchi slaw, pickled radish, green onions, and toasted sesame seeds.
- Serve immediately, with sriracha sauce on the side for added heat.
Kimchi Slaw:
- In a medium bowl, whisk together mayonnaise, lime juice, and honey. Add the chopped kimchi and stir until well combined.
- Taste and adjust the seasoning with salt, pepper, and additional lime juice if needed.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Just before serving, garnish with chopped cilantro.
