Spicy and Satisfying: Korean-Style BBQ Beef Tacos Recipe

Ingredients:

For the Beef:

  • 1 lb beef short ribs or flank steak, sliced into thin strips
  • 2 tbsp Gochujang (Korean chili paste)
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp garlic, minced
  • 1 tsp grated ginger
  • 1/4 cup water
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup toasted sesame seeds
  • Salt and pepper, to taste

For the Tacos:

  • 6-8 corn tortillas
  • Kimchi slaw (recipe below)
  • Pickled radish, thinly sliced
  • Green onions, thinly sliced
  • Sesame seeds, toasted
  • Sriracha sauce, for serving (optional)

Kimchi Slaw:

  • 2 cups kimchi, chopped
  • 1/2 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp honey
  • Salt and pepper, to taste
  • Chopped cilantro, for garnish

Instructions:

  1. In a large bowl, whisk together Gochujang, soy sauce, brown sugar, garlic, and ginger. Add the sliced beef and let marinate for at least 2 hours or overnight.
  2. Preheat a grill or grill pan to medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off. Grill the beef for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer to a cutting board and let rest for 5 minutes before slicing into thin strips.
  3. Meanwhile, toast the sesame seeds in a small skillet over medium heat, stirring frequently, until fragrant and lightly browned.
  4. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  5. Assemble the tacos by slicing the beef into thin strips and placing it onto a warmed tortilla. Top with kimchi slaw, pickled radish, green onions, and toasted sesame seeds.
  6. Serve immediately, with sriracha sauce on the side for added heat.

Kimchi Slaw:

  1. In a medium bowl, whisk together mayonnaise, lime juice, and honey. Add the chopped kimchi and stir until well combined.
  2. Taste and adjust the seasoning with salt, pepper, and additional lime juice if needed.
  3. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  4. Just before serving, garnish with chopped cilantro.
