Servings: 8-10 people

Ingredients:

  • 2 pounds beef chuck roast
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 packet (1.25 oz) taco seasoning
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 8-10 taco shells
  • Optional toppings: diced tomatoes, shredded lettuce, diced avocado, sour cream, shredded cheese, cilantro, and salsa

Instructions:

  1. Season the beef: Rub the beef chuck roast with salt, pepper, chili powder, cumin, and paprika.
  2. Brown the beef: Heat a large skillet over medium-high heat. Add the sliced onion and cook until caramelized, about 5 minutes. Add the beef and cook until browned on all sides, about 2-3 minutes per side. Remove from heat and set aside.
  3. Prepare the slow cooker: In a 6-quart slow cooker, combine the diced tomatoes, red kidney beans, and taco seasoning. Stir to combine.
  4. Add the beef and cook: Add the browned beef and sliced onion to the slow cooker. Cook on LOW for 8-10 hours or HIGH for 4-6 hours.
  5. Shred the beef: Using two forks, shred the cooked beef into bite-sized pieces. Return the shredded beef to the slow cooker and stir to combine with the sauce.
  6. Warm the taco shells: Wrap the taco shells in a damp paper towel and microwave for 20-30 seconds to warm.
  7. Assemble the tacos: Spoon the tender beef mixture into the warmed taco shells and top with your desired toppings.
