Roasted Beef Tenderloin:

Ingredients:

  • 1 (1.5-2 pound) beef tenderloin
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Horseradish Cream Sauce:

Ingredients:

  • 1 cup heavy cream
  • 2 tablespoons prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh chives
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, garlic, thyme, salt, and pepper.
  3. Rub the mixture all over the beef tenderloin, making sure to coat it evenly.
  4. Place the beef tenderloin on a rimmed baking sheet or a roasting pan, and roast for 20-25 minutes per pound, or until it reaches your desired level of doneness. Use a meat thermometer to check for internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (65°C) for medium-well.
  5. While the beef is roasting, prepare the horseradish cream sauce. In a small bowl, whisk together the heavy cream, horseradish, Dijon mustard, and chives until smooth. Season with salt and pepper to taste.
  6. Once the beef is cooked to your liking, remove it from the oven and let it rest for 10-15 minutes before slicing it thinly against the grain.
  7. Serve the sliced beef with the horseradish cream sauce spooned over the top.
