Ingredients:

For the stew:

  • 2 pounds beef stew meat (such as chuck or round)
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and chopped
  • 2 medium potatoes, peeled and chopped
  • 1 large red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the crusty bread:

  • 1 loaf (1 pound) Italian bread
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven or heavy pot, heat 2 tablespoons of olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
  3. Add the chopped onions to the pot and cook until they are softened and lightly browned, about 8 minutes. Add the minced garlic and cook for an additional minute.
  4. Add the chopped carrots, potatoes, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  5. Add the browned beef back to the pot, along with the diced tomatoes, beef broth, thyme, salt, and pepper. Bring the mixture to a boil, then cover the pot and transfer it to the preheated oven.
  6. Braise the stew for 2 hours, or until the beef is tender and the vegetables are cooked through.
  7. While the stew is cooking, prepare the crusty bread. Preheat the oven to 400°F (200°C). Slice the Italian bread into 1-inch thick slices and place on a baking sheet. Drizzle with olive oil and sprinkle with Parmesan cheese and parsley. Bake for 10-12 minutes, or until the bread is golden brown and crispy.
  8. Serve the stew hot, accompanied by slices of crusty bread for dipping.
