Ingredients:

  • 2 pounds beef stew meat (chuck or round)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and chopped
  • 2 medium potatoes, peeled and chopped
  • 1 large red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 bay leaves
  • Fresh parsley or thyme, chopped (optional)

Instructions:

  1. Brown the Beef: Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Remove the browned beef from the pot and set aside.
  2. Soften the Onions: Reduce heat to medium and add the chopped onion to the pot. Cook, stirring occasionally, until the onion is softened and translucent, about 8 minutes.
  3. Add Aromatics: Add the minced garlic and cook for 1 minute, stirring constantly to prevent burning.
  4. Add Vegetables: Add the chopped carrots, potatoes, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  5. Add Tomatoes and Broth: Add the diced tomatoes, beef broth, thyme, salt, and pepper to the pot. Stir to combine.
  6. Return the Beef: Add the browned beef back to the pot, making sure it’s covered with the stew mixture.
  7. Simmer: Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 2 1/2 to 3 hours, or until the beef is tender and the vegetables are cooked through.
  8. Finish with Fresh Herbs: Remove the bay leaves and serve the stew hot, garnished with chopped fresh parsley or thyme, if desired.

  • Use a slow cooker: Brown the beef and cook the vegetables in a skillet, then transfer everything to a slow cooker and cook on low for 6-8 hours.
