Ingredients:
- 2 pounds beef stew meat (chuck or round)

Instructions:
- Brown the Beef: Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Remove the browned beef from the pot and set aside.

- Return the Beef: Add the browned beef back to the pot, making sure it’s covered with the stew mixture.
- Simmer: Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 2 1/2 to 3 hours, or until the beef is tender and the vegetables are cooked through.
- Finish with Fresh Herbs: Remove the bay leaves and serve the stew hot, garnished with chopped fresh parsley or thyme, if desired.
