Grilled Beef Fajitas: Sizzling Skillet with Sauteed Onions and Bell Peppers
Servings: 4-6
Ingredients:
For the beef:
- 1 pound beef fajita-cut strips (such as skirt steak or flank steak)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper, to taste
For the skillet:
- 1 large onion, sliced
- 2 large bell peppers (any color), sliced
- 2 tablespoons olive oil
- Salt and pepper, to taste
For the serving:
- 6 small flour tortillas
- Optional toppings: avocado, sour cream, salsa, shredded cheese, cilantro
Instructions:
- Prepare the beef: In a large resealable plastic bag, combine olive oil, garlic, oregano, cumin, salt, and pepper. Add the beef strips, turning to coat evenly. Seal the bag and refrigerate for at least 2 hours or overnight.
- Grill the beef: Preheat grill to medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off. Grill the beef for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer the beef to a cutting board and let rest for 5 minutes.
- Sauté the onions and bell peppers: Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat. Add the sliced onions and cook for 5 minutes, or until they start to soften. Add the sliced bell peppers and cook for an additional 5 minutes, or until they’re tender and lightly charred. Season with salt and pepper to taste.
- Assemble the fajitas: Slice the grilled beef into thin strips. Add the beef to the skillet with the sautéed onions and bell peppers. Stir to combine.
- Warm the tortillas: Wrap the tortillas in a damp paper towel and microwave for 20-30 seconds, or until warm and pliable.
- Serve: Divide the beef and vegetable mixture among the tortillas. Add your desired toppings and serve immediately.
Tips and Variations:
- Use a variety of bell peppers, such as Anaheim, Poblano, or Habanero, for different levels of heat and flavor.
- Add some heat with diced jalapeños or serrano peppers to the skillet with the onions and bell peppers.
- Serve with a dollop of sour cream or a sprinkle of shredded cheese to cool down the heat.
- Experiment with different seasonings, such as chili powder or cayenne pepper, to add more depth to the beef marinade.
