Creamy Beef and Mushroom Stroganoff

Ingredients:

  • 1 pound beef strips (sirloin or ribeye)
  • 2 cups mixed mushrooms (button, cremini, shiitake)
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup all-purpose flour
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard

  • 1 cup cooked egg noodles
  • Fresh parsley, chopped (optional)

Instructions:

  1. Cook the egg noodles according to package instructions and set aside.
  2. In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of butter. Add the mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
  4. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
  5. Sprinkle the flour over the mushroom mixture and cook for 1 minute, stirring constantly.
  6. Gradually add the beef broth and heavy cream to the skillet, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook for 2-3 minutes, or until the sauce thickens.
  7. Add the browned beef back to the skillet and stir to combine with the sauce. Season with salt, pepper, Dijon mustard, and paprika.
  8. Serve the beef and sauce over cooked egg noodles and garnish with chopped parsley, if desired.
