Description: A hearty, comforting casserole that combines the flavors of ground beef, mushrooms, and stroganoff sauce with the classic cowboy twist of a crunchy cornflake topping. Perfect for a weeknight dinner or a weekend gathering.

Ingredients:

For the Ground Beef and Mushroom Stroganoff:

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cups mixed mushrooms (button, cremini, shiitake), sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 8 oz sour cream
  • 1 cup shredded cheddar cheese

For the Cornflake Topping:

  • 1 cup cornflakes, crushed
  • 2 tablespoons butter, melted
  • 1/2 cup grated cheddar cheese

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon, until browned, about 5-7 minutes. Drain excess fat.
  3. Add the chopped onion, mushrooms, garlic, beef broth, tomato paste, mustard, Worcestershire sauce, paprika, salt, and pepper to the skillet. Stir to combine.
  4. Bring the mixture to a simmer and cook for 10-12 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.
  5. Stir in the sour cream and shredded cheddar cheese until smooth.
  6. In a separate bowl, mix the crushed cornflakes and melted butter until well combined. Stir in the grated cheddar cheese.
  7. In a 9×13-inch baking dish, spread half of the ground beef and mushroom mixture. Top with half of the cornflake mixture.
  8. Repeat the layers, starting with the remaining ground beef and mushroom mixture, then the remaining cornflake mixture.
  9. Cover the dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden brown and the casserole is hot and bubbly.
  11. Remove from the oven and let it rest for 10-15 minutes before serving.
