Cowboy Casserole: Ground Beef and Mushroom Stroganoff Recipe

Ingredients:
For the Ground Beef and Mushroom Stroganoff:
- 1 lb ground beef
- 1 medium onion, finely chopped
- 2 cups mixed mushrooms (button, cremini, shiitake), sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce

For the Cornflake Topping:
- 1 cup cornflakes, crushed
- 2 tablespoons butter, melted
- 1/2 cup grated cheddar cheese
Instructions:
- Preheat oven to 350°F (180°C).
- In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon, until browned, about 5-7 minutes. Drain excess fat.
- Add the chopped onion, mushrooms, garlic, beef broth, tomato paste, mustard, Worcestershire sauce, paprika, salt, and pepper to the skillet. Stir to combine.
- Bring the mixture to a simmer and cook for 10-12 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.
- Stir in the sour cream and shredded cheddar cheese until smooth.
- In a separate bowl, mix the crushed cornflakes and melted butter until well combined. Stir in the grated cheddar cheese.
- In a 9×13-inch baking dish, spread half of the ground beef and mushroom mixture. Top with half of the cornflake mixture.
- Repeat the layers, starting with the remaining ground beef and mushroom mixture, then the remaining cornflake mixture.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden brown and the casserole is hot and bubbly.
- Remove from the oven and let it rest for 10-15 minutes before serving.
