Classic Beef and Mushroom Meatball Subs

Servings: 4-6

Ingredients:

For the Meatballs:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 cup sautéed mushrooms (see note)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 4-6 sub rolls

For the Mushroom Sauté:

  • 2 cups mixed mushrooms (button, cremini, shiitake), sliced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, sautéed mushrooms, Worcestershire sauce, oregano, salt, and pepper. Mix well with your hands or a wooden spoon until just combined.
  3. Use your hands to shape the mixture into meatballs, about 1 1/2 inches (3.8 cm) in diameter. Place the meatballs on a baking sheet lined with parchment paper.
  4. Bake the meatballs for 18-20 minutes, or until cooked through.
  5. While the meatballs are baking, sauté the mushrooms in butter until tender and lightly browned. Season with salt and pepper to taste.
  6. Warm the marinara sauce in a saucepan over medium heat.
  7. To assemble the subs, place a few meatballs on each sub roll, followed by a spoonful of marinara sauce, and a spoonful of sautéed mushrooms.
  8. Top with shredded mozzarella cheese (optional) and place under the broiler for a few minutes, or until the cheese is melted and bubbly.
  9. Serve immediately and enjoy!

Note: To sauté the mushrooms, heat 1 tablespoon of butter in a skillet over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their moisture and start to brown, about 5-7 minutes. Add the remaining 1 tablespoon of butter and continue cooking until the mushrooms are tender and lightly browned.
