Beefy Stuffed Peppers: A Flavorful and Filling Dinner

Ingredients:
- 4 large bell peppers, any color
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley
Instructions:
- Preheat oven to 375°F (190°C).
- Cut the tops off the peppers and remove the seeds and membranes. Place them in a baking dish.
- In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon, until browned, about 5-7 minutes.
- Add the chopped onion, minced garlic, paprika, and oregano to the skillet and cook until the onion is translucent, about 5 minutes.
- Stir in the cooked rice, diced tomatoes, salt, and pepper.
- Stuff each pepper with the beef mixture, filling to the top.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and top each pepper with shredded cheddar cheese. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Sprinkle with chopped parsley and serve hot.
