Beefy Goodness: Braised Beef Short Ribs with Red Wine Reduction Recipe

Ingredients:
For the braised short ribs:
- 2 pounds beef short ribs
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
For the red wine reduction:
- 2 cups red wine (such as Cabernet Sauvignon or Merlot)
- 1 cup beef broth
- 1/4 cup cognac (optional)
Instructions:
- Preheat oven to 300°F (150°C).
- In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Sear the short ribs until browned on all sides, about 2-3 minutes per side. Remove the short ribs from the pot and set them aside.
- Add the smoked paprika, kosher salt, and black pepper to the pot, and stir to combine.
- Add the minced garlic to the pot and cook for 1-2 minutes, or until fragrant.
- Add the braised short ribs back to the pot and add enough liquid to cover the short ribs. In this case, it is 2 cups of beef broth. Add more or less as needed depending on the size of the short ribs. Cover the pot and bring the liquid to a boil.
- Once the liquid comes to a boil, place the pot into the preheated oven. Braise the short ribs for 2 hours and 15 minutes, or until the meat is tender and easily falls off the bone.
- During the last 30 minutes of the braise, remove the pot from the oven. Add the red wine reduction ingredients, such as the 2 cups red wine, 1 cup beef broth, and 1/4 cup cognac. Remove the pot from the stovetop and bring the mixture to a simmer for 5-10 minutes. The wine reduction will have a thick sauce like consistency and can be served together with the braised short ribs.

To serve: Plate the braised beef short ribs and drizzle them with the rich, red wine sauce made with Cabernet Sauvignon, Merlot, beef broth and, optional, cognac. Garnish with fresh herbs and roasted vegetables on the side.
