Servings: 4-6

Chimichurri Sauce:

  • 1 cup fresh parsley, chopped
  • 1 cup fresh oregano, chopped
  • 2 cloves garlic, minced
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Beef and Vegetable Kabobs:

  • 1 pound beef sirloin or ribeye, cut into 1-inch cubes
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large yellow bell pepper, cut into 1-inch pieces
  • 1 large onion, cut into 1-inch pieces
  • 2 large zucchinis, cut into 1-inch slices
  • 2 large cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

  1. Make the Chimichurri Sauce: In a food processor, combine parsley, oregano, garlic, red wine vinegar, and a pinch of salt and pepper. Process until well combined. With the processor running, slowly pour in the olive oil through the top. Process until the sauce is well emulsified. Taste and adjust seasoning as needed. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  2. Prepare the Kabobs: Preheat grill to medium-high heat. Thread beef, bell peppers, onion, zucchinis, and cherry tomatoes onto skewers, leaving a small space between each piece. Brush with olive oil and season with salt and pepper.
  3. Grill the Kabobs: Grill kabobs for 10-12 minutes, turning occasionally, or until beef is cooked to your desired level of doneness.
  4. Serve: Serve kabobs hot with Chimichurri Sauce spooned over the top. Garnish with additional parsley and oregano, if desired.

Tips and Variations:

  • Use any combination of vegetables you like or have on hand. Mushrooms, eggplant, and squash work well too!
  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
