Beef and Onion Meatball Subs with Marinara Sauce

Here’s a recipe for Beef and Onion Meatball Subs with Marinara Sauce:

Servings: 4-6

Cooking Time: 30-40 minutes

Ingredients:

For the Meatballs:

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese

For the Marinara Sauce:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup beef broth
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste

For the Subs:

  • 4-6 sub rolls
  • Provolone or mozzarella cheese, sliced
  • Fresh basil leaves, chopped (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, chopped onion, egg, breadcrumbs, olive oil, oregano, salt, and pepper. Mix everything with your hands or a wooden spoon until just combined. Do not overmix.
  3. Use your hands to shape the mixture into meatballs, about 1 1/2 inches (3.8 cm) in diameter. Place the meatballs on a baking sheet lined with parchment paper.
  4. Drizzle the meatballs with a little bit of olive oil and sprinkle with Parmesan cheese. Bake for 18-20 minutes, or until cooked through.
  5. While the meatballs are baking, prepare the marinara sauce. Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook for 1 minute, until fragrant.
  6. Add the crushed tomatoes, beef broth, and dried oregano to the saucepan. Season with salt and pepper to taste. Bring the sauce to a simmer and let it cook for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.
  7. Assemble the subs by placing 3-4 meatballs on each sub roll. Spoon some marinara sauce over the meatballs and top with sliced cheese.
  8. Place the subs under the broiler for 2-3 minutes, until the cheese is melted and bubbly.
  9. Remove the subs from the oven and sprinkle with chopped basil leaves, if desired. Serve immediately and enjoy!

Note: You can also make the meatballs in a skillet on the stovetop if you prefer. Simply cook them in a little bit of oil over medium-high heat until browned on all sides and cooked through.
