Ingredients:
For the Beef and Guinness Filling:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup Guinness stout
- 1 cup beef broth
- 2 tbsp tomato paste
- 2 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 carrots, peeled and diced
- 2 potatoes, peeled and diced
For the Mashed Potatoes:
- 3-4 large potatoes, peeled and chopped into 1-inch cubes
- 1/4 cup butter
- 1/2 cup milk or heavy cream
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up into small pieces as it cooks.
- Add the diced onion, minced garlic, Guinness stout, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper to the skillet. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, stirring occasionally.
- Add the diced carrots and potatoes to the skillet and continue to simmer for another 10-15 minutes, or until the vegetables are tender.
- Meanwhile, prepare the mashed potatoes. Place the chopped potatoes in a large pot and add enough cold water to cover them. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
- Drain the potatoes and return them to the pot. Add the butter, milk or heavy cream, salt, and pepper, and mash the potatoes with a potato masher or a fork until they’re smooth and creamy.
- Transfer the beef and Guinness filling to a 9×13 inch baking dish. Top with the mashed potatoes, spreading them evenly to cover the filling.
- Bake the shepherd’s pie in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and the filling is hot and bubbly.
