Ingredients:

For the Beef and Guinness Filling:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup Guinness stout
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced

For the Mashed Potatoes:

  • 3-4 large potatoes, peeled and chopped into 1-inch cubes
  • 1/4 cup butter
  • 1/2 cup milk or heavy cream
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up into small pieces as it cooks.
  3. Add the diced onion, minced garlic, Guinness stout, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper to the skillet. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, stirring occasionally.
  5. Add the diced carrots and potatoes to the skillet and continue to simmer for another 10-15 minutes, or until the vegetables are tender.
  6. Meanwhile, prepare the mashed potatoes. Place the chopped potatoes in a large pot and add enough cold water to cover them. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
  7. Drain the potatoes and return them to the pot. Add the butter, milk or heavy cream, salt, and pepper, and mash the potatoes with a potato masher or a fork until they’re smooth and creamy.
  8. Transfer the beef and Guinness filling to a 9×13 inch baking dish. Top with the mashed potatoes, spreading them evenly to cover the filling.
  9. Bake the shepherd’s pie in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and the filling is hot and bubbly.
  10. Serve hot and enjoy!
