Ingredients:

For the beef:

For the vegetables:

  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 2 cups broccoli florets
  • 2 cups sliced mushrooms (button or cremini)

For the soy-ginger sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon sesame oil

Instructions:

  1. In a medium bowl, whisk together soy sauce, olive oil, garlic, and ginger. Add the beef strips and marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off. Add the beef to the skillet and cook for 3-4 minutes, or until browned and cooked through. Transfer the beef to a plate and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of oil. Add the sliced bell pepper, onion, and mushrooms. Cook for 4-5 minutes, or until the vegetables are tender-crisp.
  4. Add the broccoli to the skillet and cook for an additional 2 minutes, or until tender.
  5. In a small bowl, whisk together soy sauce, rice vinegar, honey, grated ginger, and sesame oil. Pour the sauce over the vegetables and stir to combine.
  6. Add the cooked beef back to the skillet and stir to combine with the vegetables and sauce.
  7. Cook for an additional 1-2 minutes, or until the sauce has thickened and the beef is coated.
  8. Serve hot over rice or noodles and garnish with sliced green onions and toasted sesame seeds, if desired.
