Spicy Oriental Chicken Broth with Soy Sauce and Ketchup-infused Flavors Recipe

Ingredients:

– 2 lbs boneless, skinless chicken thighs
– 1 tablespoon vegetable oil
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 2-inch piece of ginger, grated
– 1/2 cup ketchup
– 1/2 cup low sodium soy sauce
– 1/4 cup honey
– 1/4 cup rice wine vinegar
– 3 cups low-sodium chicken broth
– 2 dried chili peppers, broken into pieces
– 2 cups water
– 3 scallions, thinly sliced
– 1 pack of rice noodles (or your choice of noodles)
– Fresh cilantro, chopped (optional)
– Salt and freshly ground black pepper, to taste

Instructions:

1. In a large pot, heat vegetable oil over medium heat. Add chicken thighs and cook on both sides until browned. Remove chicken from the pot and set them aside.

2. In the same pot, add chopped onions and cook until they become translucent, approximately 3-4 minutes.

3. Add garlic and grated ginger. Cook for another 1-2 minutes until the spices release their aroma.

4. Stir in the ketchup, low sodium soy sauce, honey, and rice wine vinegar. Mix well and let the sauce simmer for about 2 minutes.

5. Pour in the low-sodium chicken broth, dried chili peppers, and 2 cups of water. Season with salt and freshly ground black pepper, to taste. Bring the broth to a boil.

6. Reduce heat to low and return the browned chicken thighs to the pot. Cover with a lid and simmer for 20-25 minutes, or until the chicken is fully cooked and tender.

7. While the chicken is simmering, prepare the rice noodles according to the package instructions and set them aside.

8. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.

9. Reheat the broth over medium heat. Add the cooked rice noodles to the pot, and let the noodles soak up the broth for a few minutes.

10. Garnish the soup with thinly sliced scallions and chopped fresh cilantro, if desired. Serve the Spicy Oriental Chicken Broth into bowls and ladle out the noodles and chicken.
