Cinnamon Swirl Comfort: A Warming Recipe for Bakery Delight

Ingredients:

  • 12 ounces of all-purpose flour, plus more for dusting
  • 1/2 cup of granulated sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1/2 cup of unsalted butter, softened
  • 4 large eggs
  • 3/4 cup of milk
  • 2 teaspoons of pure vanilla extract
  • 2 tablespoons of ground cinnamon
  • 1/4 cup of granulated sugar
  • 6 ounces of cream cheese, softened
  • 1 ounce of unsalted butter
  • 1/4 cup of brown sugar
  • 1/4 cup of heavy cream
  • Confectioners’ sugar (for dusting)

Instructions:

  1. Preheat your oven to 350°F (180°F (180°C).
  2. Lightly grease a loaf pan or two 8-inch round cake pans, and dust with flour.
  3. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  4. In a separate bowl, cream together the softened butter and 3/4 cup of granulated sugar until light and fluffy.
  5. Add in the eggs, one at a time, beating well after each addition.
  6. Stir in the vanilla extract and slowly add in the flour mixture, alternating with the milk, until the batter is smooth and lump-free.
  7. Divide the batter evenly between the two prepared cake pans, smoothing the tops with a spatula.
  8. In a small bowl, mix together the ground cinnamon and 1/4 cup of granulated sugar. Sprinkle this mixture evenly over the tops of the batter.
  9. In another small bowl, mix together the softened cream cheese, 1 ounce of butter, and brown sugar until smooth. Dollop spoonfuls of this mixture over the cinnamon mixture, then use a knife to swirl it through the batter.
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  11. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.
  12. Once the cakes are cool, whisk together the heavy cream and confectioners’ sugar until smooth. Pour this glaze over the top of the cakes, allowing it to drip down the sides.
  13. Serve your Cinnamon Swirl Comfort as is, or with a dollop of additional whipped cream or a scoop of vanilla ice cream.
