Awesome Autumn Delight: Curry-Chickpea and Butternut Squash Stew

Ingredients:

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 small butternut squash (about 2 cups), peeled and cubed
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, then cook for 2-3 minutes until softened.
  2. Add the curry powder, cumin, and coriander to the pot and stir to combine.
  3. Add the chopped celery and carrots to the pot, cooking for another 2-3 minutes until slightly softened.
  4. Add the cubed butternut squash to the pot, stirring to coat with the spices.
  5. Pour in the vegetable broth and coconut milk, then bring the curry to a simmer.
  6. Cover the pot and let the stew cook for about 25-30 minutes, or until the squash is tender.
  7. Add the chickpeas to the stew, stirring to combine.
  8. Season with salt and pepper to taste.
  9. Serve the stew hot, garnished with fresh parsley.
