Instructions:
1. In a large tagine or heavy pot, heat olive oil over medium-high heat. Add the chopped onion and minced garlic, and sauté until the onion is softened and translucent, about 4-5 minutes.
2. Stir in the ground cumin, ground coriander, ground ginger, turmeric, paprika, cinnamon, and cayenne pepper (if using). Toast the spices for an additional minute until fragrant.
3. Add the diced carrot, zucchini, sweet potato, and diced red bell pepper to the pot. Stir well to coat the vegetables in the spice mixture.
4. Pour in the diced tomatoes (with their juice), vegetable broth, chickpeas, and lemon juice. Bring the mixture to a boil, then reduce heat to low, and cover the pot. Let the tagine simmer for about 40-45 minutes, or until the vegetables are tender and the flavors have melded together.
5. Stir in the chopped cilantro and mint. Season the tagine with salt and pepper to taste. Additional fresh herbs can be added for more flavor!
6. Serve the hearty cumin-infused vegetable tagine over steamed basmati rice or with a side of warm, crusty bread.
