Rosemary-Infused Herb Roasted Chicken Delight

Title: Rosemary-Infused Herb Roasted Chicken Delight

Ingredients:

  • 1 whole chicken, around 4 lbs (1.8 kg), giblet removed and rinsed
  • 5-6 medium-sized cloves of garlic, peeled
  • 1/4 cup (60 ml) olive oil
  • 3 tablespoons rosemary leaves, finely chopped
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh thyme leaves, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 5-6 sprigs of fresh rosemary

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Coarsely chop the garlic cloves and place them at the bottom of a roasting pan.
  3. In a small bowl, mix the olive oil, rosemary leaves, lemon zest, thyme leaves, salt, black pepper, red pepper flakes, and half of the lemon juice – whisk together until well combined to create the herby rosemary marinade.
  4. Pat the chicken dry using paper towels and rub it all over with the herby rosemary marinade. Make sure to get the marinade into the cavity and under the skin as well. Secure the legs together with kitchen twine or a skewer, if necessary.
  5. Slice the remaining lemon, and tuck the slices along with the sprigs of fresh rosemary in-between the chicken’s skin and meat, and in the cavity.
  6. Place the chicken on top of the chopped garlic in the roasting pan and roast it for 1 hour and 20 minutes or until the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the oven and let it rest for at least 10-15 minutes before carving.
  8. Serve the delicious Rosemary-Infused Herb Roasted Chicken with the roast garlic, fresh rosemary sprigs, and lemon slices for garnish.
