Refreshing Lemon-Infused Tilapia with Herb and Citrus Vinaigrette

Ingredients:

4 tilapia fillets (6 ounces each)

1 tablespoon fresh lemon juice

1 tablespoon olive oil

2 tablespoons chopped fresh parsley

2 tablespoons chopped fresh basil

2 tablespoons chopped fresh dill

Zest of 1 lemon

2 tablespoons chopped fresh mint

2 tablespoons chopped fresh flat-leaf parsley

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 tablespoon white wine vinegar

1/2 teaspoon honey (optional)

Salt and black pepper to taste

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with non-stick aluminum foil for easy cleanup.

  2. In a small bowl, mix 1 tablespoon of fresh lemon juice, 1 tablespoon of olive oil, 2 tablespoons of chopped parsley, 2 tablespoons of chopped basil, 2 tablespoons of chopped dill, the zest of one lemon, and 2 tablespoons of chopped mint.

  3. Place the tilapia fillets on the prepared baking sheet. Coat each fillet evenly with the herb and lemon mixture.

  4. Brush the top of each tilapia fillet with the remaining olive oil.

  5. Bake in the preheated oven for 15-18 minutes, or until the fins start to separate and the fish is opaque and flaky.

  6. While the tilapia is baking, prepare the vinaigrette. In a bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of fresh lemon juice, 1 tablespoon of white wine vinegar, 1/2 teaspoon of honey (optional), and salt and pepper to taste.

  7. Once the tilapia is done, transfer the fillets to a serving platter. Drizzle the herb and citrus vinaigrette over the top of each fillet.

  8. Serve immediately and enjoy the refreshing combination of lemon-infused tilapia and herb and citrus vinaigrette.
