Ingredients:

  • 14-ounce package of firm tofu, drained and cut into 1-inch cubes

  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 8 ounces shiitake mushrooms, stemmed and sliced
  • 2 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 scallions, chopped
  • 1/4 cup vegetable or chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Sliced chili peppers (optional)
  • 2 tablespoons toasted sesame seeds

  1. Prepare tofu: Place tofu cubes between two plates lined with paper towels and weigh them down with a heavy object (e.g., canned food) for 15-20 minutes to remove excess moisture.
  2. Cut the pressed tofu into cubes, about 1 inch in size.
  3. In a small bowl, whisk together cornstarch, 1 tablespoon soy sauce, salt, and pepper. Dredge tofu cubes in the cornstarch mixture until well coated.
  4. Heat olive oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, approximately 5-7 minutes. Remove the tofu from the pan and set aside.
  5. In the same skillet, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  6. Add shiitake mushrooms, broccoli florets, and bell peppers. Stir-fry for about 6-8 minutes until the vegetables are tender yet crisp.
  7. In a small bowl, whisk together the broth, 2 tablespoons soy sauce, and oyster sauce (if using).
  8. Pour the sauce over the vegetables and tofu, stirring to combine evenly. Cook for another 2-3 minutes until the sauce coats the ingredients well.
  9. If desired, add sliced chili peppers and toasted sesame seeds for extra flavor and texture.
