Ingredients:
– 4 large portobello mushrooms, stems removed and caps gill-side down
– 1/4 cup balsamic vinegar
– 3 tablespoons olive oil
– Salt and pepper, to taste
– 1 medium onion, sliced
– 1 bell pepper, thinly sliced
– 4 whole-grain burger buns
– Fresh lettuce leaves
– Tomato slices
– Fresh basil leaves
– Vegan mayonnaise, to taste
– Dijon mustard, to taste

Special twist: Vegan Aioli
– 1/2 cup vegan mayonnaise
– 1 clove garlic, minced
– 1 tablespoon lemon juice
– 1/2 teaspoon smoked paprika
– Salt and pepper, to taste

Instructions:

1. In a small bowl, combine balsamic vinegar, 1 tablespoon of olive oil, and salt and pepper to taste. Brush the mushroom caps with the mixture and set aside.

2. Preheat the grill to medium heat. Place mushrooms on the grill, gill-side up, on high for 3-4 minutes, or until grill marks appear. Flip and grill for another 3-4 minutes, until soft. Remove from the grill and set aside.

3. In a large sauté pan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the sliced onions and bell peppers. Cook until the onions are caramelized and the peppers are tender.

4. To prepare the vegan aioli, mix together vegan mayonnaise, minced garlic, lemon juice, smoked paprika, and salt and pepper to taste in a small bowl.

5. Toast the burger buns on the grill until lightly golden.

6. To assemble the burgers, place a grilled portobello mushroom cap on each bottom bun. Top with caramelized onions, sautéed peppers, fresh lettuce, tomato slices, basil leaves, and a generous spread of vegan aioli.

7. Place the remaining mushroom cap on top and complete the burger with the other bun.
