Royal Rainbow Delight: Lavishly Crafted Purple Pot Roast Recipe

Serves: 8

Ingredients:

– 4-5 lb beef chuck roast
– Salt and pepper, to taste
– 1/4 cup olive oil
– 2 large onions, thinly sliced
– 8 cloves of garlic, minced
– 6 cups beef broth
– 3 large carrots, peeled and roughly chopped
– 3 large potatoes, peeled and roughly chopped
– 4 large beets, peeled and sliced
– 4 cups purple cabbage, thinly sliced
– 2 cups red wine
– 2 tablespoons fresh rosemary, chopped
– 2 tablespoons fresh thyme, chopped
– 2 tablespoons cornstarch
– 2 tablespoons water

Instructions:

1. Season the beef chuck roast generously with salt and pepper. Heat olive oil in a large pot over medium heat. Sear the roast on all sides until browned, about 8-10 minutes. Remove the roast and set aside.

2. In the same pot, add the sliced onions and sauté until soft, about 5 minutes. Add the minced garlic and sauté for another minute.

3. Pour in the beef broth and stir to loosen any browned bits from the bottom of the pot. Place the roast back into the pot.

4. Add the carrots, potatoes, beets, and purple cabbage. Pour in the red wine and stir to combine.

5. Sprinkle fresh rosemary and thyme over the ingredients. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef becomes tender.

6. In a small bowl, whisk together cornstarch and water until smooth. Pour the mixture into the pot, stirring to incorporate. Simmer for an additional 10 minutes, or until the liquid reaches the desired thickness.

7. Remove the roast from the pot and slice thinly against the grain. Serve the beef with the veggies and the rich purple sauce on the side.
