Ingredients:

1. 2 cups cooked chickpeas (drained and rinsed if using canned)
2. 1 large onion, finely chopped
3. 3 garlic cloves, minced
4. 2 teaspoons ginger, grated
5. 2 tablespoons vegetable oil
6. 2 teaspoons cumin powder
7. 2 teaspoons coriander powder
8. 1 teaspoon turmeric powder
9. 1 teaspoon red chili powder
10. 1 can (400 mL) diced tomatoes
11. 1 can (400 mL) coconut milk
12. 1 bunch fresh spinach, washed and chopped
13. 1 lime, juiced
14. Salt and pepper to taste
15. Fresh cilantro leaves, chopped (for garnish)
16. Cooked brown rice (for serving)

Instructions:

1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and cook until soft and translucent, around 5 minutes.
2. Add the minced garlic and grated ginger, and cook for an additional minute.
3. Stir in the cumin, coriander, turmeric, and chili powders, and cook for another minute.
4. Add the diced tomatoes, and make sure the spices are evenly mixed with the tomatoes. Cook for 2-3 minutes.
5. Add the chickpeas and coconut milk to the pan, and stir to combine with the other ingredients.
6. Lower the heat to low, cover, and simmer for 10 minutes.
7. Add the chopped spinach to the pan and cook until wilted, around 3-5 minutes.
8. Remove the pan from the heat and stir in the lime juice, salt, and pepper to taste.
9. Garnish with fresh cilantro leaves.
10. Serve hot over cooked brown rice.

*Tip: For an extra kick of flavor, add some green chilies to the curry while simmering. Adjust seasonings as desired.
