3. Add the carrot rounds to the pan, and continue to sauté the mixture for another 6 minutes, stirring frequently, until the carrots are tender.
4. While the carrots are cooking, prepare the glaze. In a small saucepan, melt the butter over low heat. Add the orange juice, honey, and ground ginger. Stir the glaze to combine everything, and then simmer for 3-4 minutes until it thickens slightly.
5. Pour the glaze over the sautéed scallions and carrots, and toss well to ensure the glaze is evenly distributed among the veggies.
6. Serve the sautéed scallions and carrots atop warm quinoa or rice. Garnish with chopped fresh parsley.
