Ingredients:
1 cup of raw quinoa
2 cups of water
1 large ripe avocado, diced
1 cup of cherry tomatoes, halved
1 small red onion, thinly sliced
1 cucumber, diced
1/2 cup of fresh parsley, chopped
1/4 cup of olive oil
2 tablespoons of apple cider vinegar
1 tablespoon of lemon juice
1 teaspoon of Dijon mustard
1/4 teaspoon of sea salt
1/4 teaspoon of ground black pepper
Instructions:
1. Rinse the quinoa under cold running water to remove its bitter outer layer.
2. In a medium-sized pot, combine the rinsed quinoa with 2 cups of water. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes, or until the quinoa is cooked and the water is absorbed.
3. Remove the pot from heat and let the quinoa cool for about 5 minutes. Fluff the quinoa with a fork and transfer it to a large mixing bowl.
