– 1/2 teaspoon paprika
– 1/2 teaspoon dried thyme
– 1 tablespoon unsalted butter, melted
– 1/4 cup crumbled feta cheese (optional)
– Fresh herbs for garnish (such as parsley or chives)

Instructions:

1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

2. In a large bowl, combine the peeled and cubed sweet potatoes, olive oil, maple syrup, salt, pepper, paprika, and dried thyme. Toss well to coat the sweet potatoes evenly.

3. Spread the sweet potatoes in a single layer on the prepared baking sheet. Make sure there is enough space between the cubes for even cooking.

4. Roast the sweet potatoes in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized at the edges. Stir the sweet potatoes once during cooking to ensure even browning.
