Title: Delicious Crispy Cassava Fries: An Irresistible Plant-Based Recipe

Ingredients:

For the Cassava Fries:

  • 2 large cassava roots, peeled and sliced into thick strips (about 1/2 inch wide)
  • 2 cups of water
  • 1/2 teaspoon of salt
  • 1 tablespoon cornstarch or arrowroot powder
  • 2 cups all-purpose flour (or a gluten-free alternative)
  • 2 eggs (or flax eggs made with 2 tablespoons ground flaxseed + 5 tablespoons water)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil, for frying

For the Dipping Sauce:

  • 1/2 cup vegan mayonnaise
  • 2 tablespoons tahini
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Step-by-step Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. Set aside.

  2. In a medium-sized pot, bring the water to a boil. Add the cassava strips and a pinch of salt, then reduce the heat to medium and cook for 8-10 minutes, until the cassava is fork-tender. Drain the cassava and let it cool completely.

  3. Meanwhile, prepare the gluten-free cornstarch and flour blend by whisking together the cornstarch or arrowroot powder and all-purpose flour in a small bowl. Add a tablespoon of the blend at a time to the sliced cassava, tossing well after each addition, until the cassava is well-coated.

  4. In a large bowl, whisk together the eggs (or flax eggs), 1/2 teaspoon salt, garlic powder, paprika, and a pinch of black pepper.

  5. Dredge the cornstarch-coated cassava strips in the egg mixture, then into the flour mixture, ensuring each fry is well coated.

  6. Heat enough vegetable oil in a large, deep frying pan over medium-high heat. Carefully add the cassava fries in batches and fry until golden brown on all sides, turning occasionally with a slotted spoon, for 3-5 minutes.

  7. Using a slotted spoon or tongs, transfer the fried cassava fries to the prepared baking sheet and bake in the preheated oven for 10-15 minutes, until crispy and lightly browned.

  8. In a small bowl, mix together the vegan mayonnaise, tahini, olive oil, lemon juice, salt, and pepper to create the dipping sauce.

  9. Place the cassava fries in a large serving bowl, wrap the bowl with a clean kitchen towel to absorb excess moisture, and serve immediately with the dipping sauce.
