Potato and Millet Casserole: A Hearty and Delicious Tuber Delight
Serves 4
Ingredients:
– 1 tablespoon olive oil
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 3 medium potatoes, peeled and thinly sliced
– 1 cup millet, rinsed and drained
– 1 1/2 cups vegetable broth
– 1/4 teaspoon black pepper
– 1/4 teaspoon salt
– 1/2 cup shredded cheddar cheese (optional)
Instructions:
1. Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish with a little olive oil.
2. In a skillet, heat the olive oil over medium heat. Sauté the onion and garlic until they become translucent, about 3 minutes.
3. Arrange a layer of potato slices evenly on the bottom of the prepared baking dish. Sprinkle half of the sautéed onion and garlic over the potatoes.
4. In a small bowl, combine the millet and vegetable broth. Pour half of the mixture over the potatoes.
5. Sprinkle the millet layer with black pepper, salt, and half of the cheese if using.
6. Add another layer of potato slices on top of the millet mixture. Sprinkle the remaining sautéed onion and garlic over the potatoes.
7. Pour the remaining millet and vegetable broth over the second layer of potatoes. Sprinkle with the remaining cheese if desired.
8. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
9. Uncover the dish and bake for an additional 15-20 minutes, or until the potatoes are tender and the milk is absorbed.
10. Remove from the oven and let the casserole cool for a few minutes before serving.
