Delicious Barley-Stuffed Delight Recipe
Ingredients:
– 1 cup pearl barley
– 2 cups vegetable broth
– 1 tbsp olive oil
– 1 large onion, finely chopped
– 2 cloves garlic, minced
– 1 medium eggplant, diced
– 1 medium zucchini, diced
– 1 cup canned tomatoes, chopped
– 1 tsp dried basil
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 cup frozen peas
– 1/2 cup grated Parmesan cheese (optional)
– Fresh basil leaves for garnish (optional)
Instructions:
1. In a medium saucepan, combine pearl barley and vegetable broth. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 30-40 minutes, or until the barley is tender and the liquid is absorbed. Set aside for later.
2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, cooking until translucent, about 3-4 minutes.
3. Add eggplant and zucchini to the skillet, stirring occasionally, until they start to soften, about 10 minutes.
4. Add canned tomatoes, dried basil, dried oregano, salt, and black pepper to the skillet. Cook, stirring occasionally until the vegetables are tender and the flavors blend together, for about 5-7 more minutes.
5. Add in the cooked barley, frozen peas, and stir to combine with the vegetables, cooking for another 2-3 minutes.
6. Remove from heat and mix in cheese, if using. This recipe can be enjoyed as is, or stuffed into peppers, zucchinis or hollowed-out tomatoes for added flavor and presentation.
7. Garnish with fresh basil leaves before serving.
