Recipe: Savory Pea and Mint Risotto Delight

Ingredients:
– 1 cup Arborio rice
– 4 cups vegetable stock or chicken broth, heated
– 1/2 cup white wine
– 4 tablespoons unsalted butter
– 2 cloves garlic, minced
– 1 cup fresh peas
– 1/2 cup freshly grated Parmesan cheese
– 1/4 cup fresh mint, finely chopped
– Salt and freshly ground black pepper, to taste

Steps:

1. In a large saucepan, heat the vegetable stock or chicken broth over medium-low heat and keep it warm.

2. In another medium-sized saucepan, melt 2 tablespoons of butter over medium heat and add the minced garlic. Cook for 1-2 minutes, until the garlic is fragrant.

3. Add the Arborio rice to the saucepan and stir around to coat the rice grains with the butter and garlic mixture.

4. Pour in the white wine, and cook until the wine has been absorbed by the rice.

5. Add a ladle of warm stock to the rice mixture, and stir until absorbed. Continue adding stock ladle by ladle and stirring until liquid is absorbed between each addition.

6. Once all the stock has been added and the rice is cooked to a creamy consistency (about 20-25 minutes), remove the saucepan from heat.

7. Stir in the remaining 2 tablespoons of butter, the fresh peas, Parmesan cheese, and fresh mint. Season with salt and pepper, to taste.

8. Serve the Savory Pea and Mint Risotto Delight warm, garnished with a sprinkle of Parmesan cheese and a few fresh mint leaves.
