Ingredients:
For Seared Salmon:
- 2 salmon fillets (6 ounces each)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon
For Lemon Herb Butter:
- 1/4 cup unsalted butter, softened
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh chives, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- Salt and black pepper to taste
For Sautéed Green Beans:
- 1 pound fresh green beans, ends trimmed
- 1 tablespoon olive oil
- 1 clove garlic, finely minced
- Salt and black pepper to taste
Step-by-step guide:
- Pat dry the salmon fillets and season with salt and black pepper.
- Heat olive oil in a large, non-stick skillet over medium-high heat. Add the salmon fillets, skin side down, and sear for 7-8 minutes, or until golden brown and crispy.
- Flip the fillets and top each with 1 tablespoon of lemon herb butter. Place the skillet in the preheated oven (under the broiler) and broil for 1-2 minutes, or until the butter is melted and bubbly.
- While the salmon is in the broiler, bring a separate pot of salted water to boil. Add trimmed green beans and blanch for 2-3 minutes until bright green and crisp-tender. Drain and set aside.
- In a small bowl, combine softened butter, lemon juice, chives, parsley, salt, and black pepper. Mix well.
- In a sauté pan over medium heat, warm olive oil and add minced garlic. Sauté for 30 seconds, then add the blanched green beans. Toss to coat and cook for another minute, adding salt and black pepper to taste.
- Serve seared salmon hot with a spoonful of lemon herb butter on top, alongside the buttery sautéed green beans. Garnish with leftover fresh herbs and lemon wedges.
